In this research, the chemical composition and tyrosinase inhibition of essential oil from Cinnamomum cassia (CC-EO) was investigated. It was concluded that CC-EO and its active ingredient cinnamaldehyde are potent anti-tyrosinase agents and possibly sources of skin whitening compounds.
Evaluation methods and results
· As main components of CC-EO, cis-2-methoxycinnamic acid (43.06%) and cinnamaldehyde (42.37%) were determined by GC-MS.
· The inhibitory capacity of CC-EO and its main components were then studied against mushroom tyrosinase. Results showed that both CC-EO and cinnamaldehyde were anti-tyrosinase agents (IC50 = 6.16 ± 0.04 mg/mL, 4.04 0.08 mg/mL, respectively). cis-2-methoxycinnamic acid on the other hand had no anti-tyrosinase activity.
· Lineweaver-Burk plots and second replots were used to calculate the inhibition kinetics: CC-EO and cinnamaldehyde acted as mixed-type inhibitors. The inhibition constants (Ki) were 4.71 ± 0.09 mg/mL for CC-EO and 2.38 ± 0.09 mg/mL for cinnamaldehyde.

There is trans-cinnamaldehyde in the Cassia oil that can be used to protect both animals and plants from bacteria. Microwave-assisted hydrodistillation (MAHD) is a new extraction technology developed by using microwave irradiation with the traditional hydrodistillation (HD). Here it was compared the effectiveness of MAHD and HD extraction from (cinnamon) bark.
Extraction effect of MAHD vs. HD methods
At the best conditions, with 250W microwave energy, 8:1 water-to-material ratio, and 90-minute extraction time, yields of MAHD and HD were 2.55% and 1.89%, respectively.
For further testing of these two extraction processes, we applied gas chromatography/mass spectrometry (GC-MS) to measure the concentrations of their active components, i.e. trans-cinnamaldehyde and some oxygenated groups. The findings indicated that the MAHD approach demonstrates superior qualities compared to HD, making it a viable and effective alternative, particularly due to its shorter extraction duration while still achieving comparable quantity and quality of cinnamon oil.
