Evaluation of Antimicrobial Activity and Foaming Ability of Several Surfactants Including Sodium Lauroamphoacetate

This work evaluated the antimicrobial activity and foaming ability of seven common surfactants including sodium lauroamphoacetate (SL). The antimicrobial properties were evaluated using the agar well diffusion method. Target microorganisms, including Listeria monocytogenes, Listeria innocua, Staphylococcus aureus, and Escherichia coli, were selected from food contact surfaces and the environments within a food manufacturing facility to mitigate cross-contamination of finished products. The foaming capacity was assessed through the Bartsch test.
The surfactants examined demonstrated promising antibacterial activity and foaming characteristics, classified into three categories: (1) strong acidic antibacterial surfactants such as cocamidopropyl betaine (CB), which exhibited potent acidic properties and effectively inhibited all tested bacteria; (2) slightly acidic surfactants (pH 5-6) like disodium laureth sulfosuccinate (DL) and odium lauroyl glutamate (SG); and (3) basic surfactants with antilisterial properties, such as sodium lauroamphoacetate (SL).
Moreover, the experiments showed that the foaming ability was independent of the increase in surfactant concentration. Basic surfactants like SL, recognized for their anti-Listeria effects, might be valuable for use in the dairy industry.
